
If you need to jump start your afternoon with some fiber and protein, you may want to try these easy to make bars.
Ingredients
2 1/2 cups old fashioned oats
1 cup whole wheat flour
1 tsp baking soda
1 tsp vanilla extract
6 oz unsweetened applesauce
6 oz honey
2 1/2 tbsp flaxseed
2 oz chopped almonds
2 oz chopped walnuts
2 oz chopped dates or raisins
Directions
Preheat oven to 325° F. Lightly grease or spray a 9x13 inch pan.
In a large bowl mix all dry ingredients. Mix all wet ingredients separately. Combine all ingredients and make sure they are well mixed with no dry spots.
Lightly press mixture into the pan. Bake for about 20 minutes. Remove the pan from the oven, let cool for 10 minutes and cut into bars. Let bars cool completely in pan then remove and refrigerate.
Options
Substitute or add chopped nuts, seeds or any type of dried fruit.
Note: If you add additional ingredients you may find that you have too many chunky ingredients and not enough to hold it together. You can get a 'feel' for this while mixing the batch.
Makes about 24 bars.
