Protein Pancakes

These high-protein and high-fiber pancakes are a great way to start your day. They also make a terrific afternoon snack (put a leftover pancake into the toaster).
2 eggs
1 tbs olive oil
1/2 cup cottage cheese
1/2 cup oatmeal
dash salt
dash vanilla
fruit as desired

Place all ingredients in a blender and blend thoroughly. (Grinding the oatmeal completely.)
Lightly oil grill.
Cook as regular pancakes (watch for bubbles on top to burst).

Cottage cheese and pancakes seemed a little weird, but I tried it and they a re great. More dense than light and fluffy we are used to but very good and they got a thumbs up from my granddaughter! That's huge! I used my coffee grinder to grind the oatmeal, it worked well.
