Mediterranean Chicken and Shrimp


Ingredients
1 lb. boneless, skinless chicken breast cut into 1-inch cubes
1 lb. shrimp cleaned
1 medium onion cut into 1/2-inch pieces
2 stalks of celery cut into 1/4-inch pieces
1 can (28 ounces) diced tomatoes
1 can (16 ounces) tomato sauce
1 tbs. minced garlic
1/4 cup sliced black olives
1/4 cup sliced mushrooms
1 tsp. oregano
1 tsp. basil
2 tbs. olive oil
grated parmesan cheese

Directions
Brown chicken in large frying pan or pot with olive oil. Remove chicken and set aside. Add more olive oil if necessary and add onion , celery and garlic. Cook about 5 minutes on medium heat and then re add the chicken. Add tomatoes, tomato sauce, oregano and basil. Bring to a boil then turn down to simmer for about 30 minutes. Add uncooked shrimp, mushrooms and olives; cook for about 10 minutes. Serve in a bowl or on a plate and sprinkle with parmesan cheese.

Options
Add green peppers, spicy hot peppers or other olives to taste. Use fresh tomatoes
