Quinoa Pilaf

This dish was served at the Open House.

1 cup diced carrots
1 cup diced scallions
1 cup diced celery
1 cup diced red pepper 
2 cloves chopped garlic
6 cups of cooked quinoa

Follow the instructions on the package to cook the quinoa. It is your choice to either use the vegetables raw or sauté them in olive oil. If you sauté the veggies then add the garlic to the pan just before they are done. You may want to add some sweet diced onion as an option. Mix all ingredients in a large bowl and chill at least 4 hours or overnight.
Serve hot or cold.
